Ingredients:

1/4 cup chia seeds
1 cup coconut milk (or almond milk)
1/2 cup diced mango
1 tablespoon honey or maple syrup
1 teaspoon vanilla extract
1/4 cup toasted coconut flakes
Zest of 1 lime
 
Instructions:
 
Prepare the Chia Pudding: 
 
In a medium bowl, whisk together the coconut milk, chia seeds, honey, and vanilla extract. Let it sit for 5-10 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 2 hours or overnight.
 
Toast the Coconut:
